• ½ green bell pepper, diced
• 4 garlic cloves, minced
• 1 can cream of mushroom soup
• ½ cup chicken broth
• 1 Tbsp Cajun seasoning
• Salt, cayenne & black pepper
• Chopped green onions
• Cooked white rice
METHOD
1. Melt butter in large skillet over medium heat.
2. Sauté onion, celery, bell pepper until soft — 8 min.
3. Add garlic; cook 1 min.
4. Stir in soup and broth until smooth.
5. Add Cajun seasoning and cayenne. Simmer 10 min.
6. Add crawfish tails; cook 5–8 min — don't overcook!
7. Fold in green onions. Spoon over fluffy white rice.
Use Louisiana crawfish tails — they're sweeter than imports. Frozen Louisiana tails work great
off-season!
