½ teaspoon lemon juice

2 cups all-purpose flour

1 ½ teaspoons baking powder

¼ teaspoon baking soda

½ teaspoon salt

1 12-ounce bag white chocolate chips

½ cup chopped macadamia nuts (optional)

1 ½ cups powdered sugar

Candied Pineapple pieces (optional)

DIRECTIONS

Preheat oven to 325 degrees. Line a baking sheet with parchment and lightly coat with non-stick cooking spray.

Drain pineapple (leave a little juice in the pineapple, don’t drain it dry) reserving 1/3 cup of the juice for the frosting.

In a mixing bowl, cream together butter and brown sugar until light and fluffy. Beat in egg, pineapple, and vanilla.

In another bowl combine flour, baking powder, baking soda, and salt and stir or whisk until thoroughly mixed. Add dry ingredients to the creamed ingredients. Stir in chips and nuts.

Use a tablespoon (or cookie scoop) to drop cookie dough onto the baking sheet about 2 inches apart. The cookies will spread.

Bake for 17 minutes, or until cookies are barely starting to brown.

Transfer cookies to wire racks to cool.

Mix powdered sugar and reserved pineapple juice in a small bowl. Glaze the cookies, top with tiny pieces of candied pineapple, if desired, and enjoy!

Yield: about 24 cookies

Iwasn’texpectingtowrite this story, since I wroteLove on Targetearly in the Pink Pistol Sisterhood series, but when the opportunity arose, a little voice whispered in my thoughts saying, “Write this story.” I’m so glad I did!

Why did I choose the Boise and Star area for the setting? It’s because I grew up in the Treasure Valley. Although I was just a baby whenLucky Shottakes place, so many memories from my childhood flooded over me when I began writing the story. Gosh, I had a great time, skipping along memory lane while incorporating those details into Levi and Grace’s journey to their happily ever after.

I’ll start with the orange and white Chevy pickup Levi purchased. It just so happens my dad purchased the same pickup in 1972. You can see a photo of Captain Cavedweller and Dad riding in it on my blog. My dad had a gun rack in the pickup that I hung onto when I was really little as I stood next to him. We had so many fun adventures in that pickup (and did a lot of farm work with it too). It will always remind me of my childhood and summers spent out in the sunshine with Dad.

My second brother was the one in our family who was goofy over cars, and I remember him talking about the Firebird Raceway in Eagle. It was the inspiration for the raceway where Levi, Grace, and Cindy watched the drag races before the disastrous fireworks show.
